OVERNIGHT OATS WITH CHIA SEEDS, COCONUT, APPLE & BEETROOT CHIPS

I like using Hunter's Gourmet Organic Chia Seeds in my recipes because they really do are the best out there in terms of quality. The Beetroot Chips are sweet, earthy and delicious. They not only add crunch to this bowl, but also make it a feast for the eyes.

I was never a healthy or mindful eater. I grew up knowing that food was a means to fulfillment not nourishment. As a result my health suffered. I slowly started changing the way I ate and cooked. It's the small steps we take every day that change us I feel.
My very healthy and delicious breakfast today is these gorgeous bowls of overnight apple, beet, coconut, chia seeds and oats topped with beetroot chips. This recipe is dairy free, gluten free, nut free and sugar free. Since the apples, beetroots and coconut are all naturally sweet, I did not feel the need to add additional sugar.
INGREDIENTS:
- 3 cups light coconut milk
- 1 cup rolled Oats
- 1 small roasted beetroot (grated)
- 1 tbsp Hunter's Gourmet Organic chia seeds
- 1 tsp dessicated coconut
- 1 apple grated
- Handful of Hunter Foods - Hunter's Gourmet Beetroot Chips
RECIPE
- Add oats, grated apple, grated beetroot and
- Hunter Foods Chia Seeds to the coconut milk.
- Refrigerate overnight.
- Next morning, you may need to add some more coconut milk if the mixture gets too thick.
- Serve chilled in bowls.
- Top with dessicated coconut, fresh mint and Hunter Foods beetroot crisps for added crunch.
NOTES:
- Feel free to replace coconut milk with any milk of your choice.
- Top with nuts, fruits or your favourite toppings for variation.
