Indian inspired Coconut Chutney with superfoods

Hunter's Gourmet Beetroot Chips and Hunter Simply Cumin and Kashmiri Red Chilli Pappadums Petite Lentil Chips are light, crisp, healthy and so addictive. I have paired them with an Indian inspired Coconut Chutney made with some power packed organic superfoods. Served together this is such a winning combination. A perfect starter to wow your dinner guests!

INGREDIENTS:
  • Grated fresh coconut: 1 and a half cup
  • Cilantro 1 bunch
  • Curry leaves half cup
  • Ginger 1 small piece
  • Green chillies to taste
  • Hunter's Gourmet Organic Flax Seeds 1 tbsp
  • Hunter's Gourmet Organic Chia Seeds 1 tbsp
  • Juice of 1 lime
  • Pink Salt to taste
  • Water to blend : approx half cup
  RECIPE 
 Add all the ingredients to a power blender, add enough water to make a thick paste.
Serve in a bowl topped with pomegranate, chia seeds and flax seeds.
Serve alongside Hunter's Gourmet Beetroot Chips, and Hunter Simply Cumin and Kashmiri Red Chilli flavoured Pappadums Petite Lentil Chips.

NOTES:
Make sure the coconut is at room temperature when you blend it. If it's cold it tends to release oil.
