How to cook Quinoa perfectly? I’m sure we all have messed up cooking this grain. I have tried every way and the best way I have found is to pour some oil in a hot pan, add a cup of quinoa and let it pop a bit. Once your kitchen smells of nuttiness add two cups of water, salt to taste and let it simmer for 18-20 minutes.
My recipe today is a family favourite. Once the quinoa has cooled, add chopped green squash, cherry tomatoes, finely chopped parsley, dried cranberries, and pinenuts. I then tossed in a homemade ginger, honey, lime and olive oil vinegarette. (Feel free to substitute with any vegetables and vinaigrette of your choice). These spicy oven roasted tomatoes were the perfect accompaniment as they added spice and tang to the dish.
PS: in collaboration with @hunterfoods, in my opinion their #organic #quinoa is the best quality and every since I started using it, I’ve been hooked. Do try, you will know why I love this product so much! https://www.instagram.com/p/BfpcVeGlFMP/?taken-by=supaintsonplates
