Christmas Chia!

Christmas and food go together like salt and vinegar or cheese and onion, and while we love the decadence of the festive season, we all feel better knowing that we are being good to ourselves. Here are two jolly recipe’s using our Hunter’s Gourmet Chia Seeds that are full of good tidings and joy for the whole family, packed with Omega-3 fatty acids, antioxidants, full of fibre, magnesium, zinc, iron and calcium! Christmas is about giving after all! Santa’s Little Helper’s Chia Seed Chocolate Pudding
  • 2 cups Milk
  • 1/2 cup Organic Chia Seeds
  • 1/4 cup Creamy Peanut Butter or Almond Butter
  • 1/4 cup Cocoa Powder
  • 6 Dates
  • 2-3 tbsp Local Honey [optional]
  • 1/2 tsp Vanilla Extract
In a large bowl, whisk together the chia seeds and milk. Stir in the other ingredients (excluding the honey) until well combined with no lumpy bits. Have a quick taste and add honey if you want a sweater pudding. Chill in the fridge for 3 hours or until the mixture is nice and cold. Transfer all of the mixture into a blender and whizz on high for 2 minutes or until pudding is smooth and creamy with a silky texture. Serve in individual cups or bowls. Chia and Cranberry Sugar Free Jam
  • 5 cups cranberries
  • 3 1/2 cups water
  • 1 ½ cup sugar substitute
  • 2 cinnamon sticks or 1tsp cinnamon powder
  • ½ cup chia seeds
Put water and cranberries in a saucepan and bring to boil. Let the mixture bubble for 5 minutes on a high heat. Turn the heat down and add the cinnamon and sugar substitute to the berries and stir. Let this all simmer for around 20 – 30 minutes until the cranberries have broken up and most of the water has evaporated – the mixture should be thick and syrupy. At this point – turn off the heat and add the chia. Leave the jam to thicken and then transfer into a sterilized jar and store in the fridge.
